Skirret, perennial root vegetable, grows about 1m high and is very resistant to cold, as well as pests and diseases. Originating in China, Skirret was introduced into Europe early in the Middle Ages where it was a primary root crop until it was replaced by the potato. Skirret produces bright white, pencil-thin roots that are sweet and have a flavour somewhere between potato and parsnip. The springshoots may also be eaten and are delicious steamed and tossed ingarlic butter. The root can also be roasted as a coffee substitute.
Simply sow 1⁄2 in. deep in early spring in drills in a shady position in hotter climates and thin out to 6 or 8 ins. apart. Keep well watered during growing season. Harvest after first frost. Lightly mulch to over winter.
